Smoked Salmon Breakfast Bruschetta Video

Energize your body and mind with this easy breakfast recipe high in brain-boosting omega-3 fatty acids. Loaded with protein, it has just 205 calories per serving.

Ingredients

    • 1/2 whole wheat baguette, sliced on a bias into 8 slices
    • 2 cups egg substitute
    • 1/4 cup fat free half-and-half
    • 2 Tbsp low fat whipped cream cheese
    • 1 Tbsp chopped fresh chives
    • 2 oz smoked salmon, finely chopped

Preparation

    • Heat oven to 350 degrees.
    • Place baguette slices on a cookie sheet and lightly toast in oven, about 7 to 8 minutes.
    • Combine egg substitute, half and half and cream cheese in a bowl. Beat until frothy with mixer or whisk. Add chives and mix again.
    • Spray a non-stick skillet with cooking spray and place over medium heat. When hot, pour egg mixture into skillet and let sit for one minute. Using a heat-resistant rubber spatula, scramble eggs. As eggs set, add salmon and salt and pepper (optional) to taste. Stir.
    • Evenly distribute the egg mixture on baguette slices. Garnish with additional chives. Serve warm.
