Chicken Mole Recipe

This healthy chicken mole recipe is a great way to use leftover chicken. The rich flavors of chocolate, raisins and almonds give the mole sauce a mellow flavor.

Ingredients

    • 1 Tbsp olive oil
    • 1 medium onion, chopped
    • 3 garlic cloves, minced
    • 1 chipotle pepper, chopped
    • 1 cup raisins
    • 2 Tbsp lime juice
    • 2 cups canned no salt added diced tomatoes
    • 1/3 cup almonds
    • 2 cups low sodium chicken broth
    • 2 tsp chili powder
    • 1/2 tsp ground cinnamon
    • 1 tsp black pepper
    • 1 1/2 oz unsweetened chocolate
    • 2 lb cooked chicken breast, shredded
    • 12 whole grain tortillas
    • Lime wedges, for garnish
    • 1 Tbsp chopped fresh cilantro, for garnish

Preparation

    • In a saucepan over medium heat, heat the oil until hot. Add the onion and garlic and sauté until softened, about 5 minutes. Add the chipotle pepper, raisins, lime juice and tomatoes and stir to combine. Bring to a simmer and cook for 10 minutes.
    • Carefully pour the mixture into a blender. Add the almonds, broth, chili powder, cinnamon and black pepper. Purée the mixture until smooth.
    • Return the mixture to the saucepan and cook over medium heat for 15 minutes, stirring occasionally. Add the chocolate and stir constantly until melted. Add the shredded chicken and heat through.
    • Serve chicken on tortillas and garnish with lime wedges and cilantro.
