Cabbage and Pepper Slaw Recipe

Try this colorful, cool and crisp cabbage and red pepper slaw instead of hig-fat cole slaw, potato salad or macaroni salad.

Ingredients

    • 1/2 cup apple cider vinegar
    • 1/4 cup water
    • 3 Tbsp sugar
    • 1/4 tsp celery seed
    • 1/4 tsp black pepper
    • 2 tsp olive oil
    • 4 cups shredded cabbage
    • 4 cups thinly sliced red bell peppers
    • 1 cup thinly sliced onion

Preparation

    • In a small saucepan, boil vinegar, water, sugar, celery seed and black pepper until sugar dissolves. Reduce heat to medium-low and simmer for 5 minutes. Remove from heat.
    • In a very large nonstick saucepan, heat the oil over medium-high heat until hot. Add the cabbage, bell peppers, and onion and toss gently. Sauté, tossing often, until vegetables begin to soften and cook down, 6 to 7 minutes.
    • Stir in the vinegar mixture and bring to a boil. Cover, reduce the heat and toss occasionally until the vegetables are very tender, 6 to 8 minutes.
    • Serve chilled.
